A traditional process

The grapes for our wines come from sustainable farming in harmony with the environment, using both traditional and modern means always looking elegant wines with body and structure with special respect to the flavorings. Proper wood selection in breeding is crutial for defining an inner personality that marks the character of our wines.

The climate and soil of our vineyards are unique and optimal compared to other regions, allowing our grapes grow better here than anywhere else in the world.

If you also add the effort and expertise of the family in the cultivation of the vineyards, we get to enhance the development of the best nuances of our wines.

Reception

The grapes are harvested manually by selecting only perfect bunches. It is transported in small boxes so they do not suffer. We take special care to ensure less than 2 hours from the time the bunch is cut till it reaches the winery.

These actions are key for the grapes to stay untouched and retain all its nuances.

Selection

Apart from the selection of grapes during the daily care of the vineyard and the harvest selection, a third selection is carried out when the grapes are taken to the winery.

All the grapes from the boxes go through a sorting table where several people separate any grain or cluster that does not meet the high quality criteria established by the Severino family.

Elaboration

In order to produce minimal stress to the grape, the use of wort pumps has been eliminated and has been replaced with conveyor belts and OVI.

So as to obtain perfect fermentationsmall tanks of 5,000 and 10,000 liters, conical and with temperature control are used. In these deposits a coldmaceration process is also carried out to get greater amount of fruit flavorings.

The grape fermentation is a crutial process that has great relevance in winemaking. Therefore, the whole process is performed under a controlled temperature with great technical surveillance to keep the soul of the grape and for the wine to get the nuances required.

Breeding

Wine ageing is performed in selected French oak barrels from the best manufacturers, Our wines rest in the dark for a minimum period of 12 months, at a constant temperature and humidity to get a balanced touch of wood and fruit.
